Setting up individual routes per vlan when deploying virtual firewalls (not going through default route)

Hardware: 2x dell 7048's newest firmware 7.1.2.3 in stacking mode over cx4 module.

I'm attempting to configure our L3 switch to route out to our firewall on a per vlan basis. Not gong through the 0.0.0.0 default route on Vlan1.

Where currently utilizing a watchguard virtual firewall within our Vmware environment and the trusted interface is setup with a 10.1.X.254 for each vlan on the firewall.

On our dell switch we have switching and routing enabled. So Each defined Vlan has an address of 10.1.X.253/24

How do we setup the next hop from the switch to the firewall/router per vlan without using the default global route gateway on vlan1.

The reason for this is because we want to be able to get reporting on traffic for each vlan on the firewall. When everything comes up through Vlan1 its all mixed together.

On the subject of access and trunking of the ports, since we're utilizing a virtual firewall bouncing in between the vmware VDS all ports coming out of the esxi hyper visors are Trunked. I'm not sure if they need to be setup with "general' or not.
